Sprouted Rum Buckwheat Crunchies

Sprouted Buckwheat Crunchies can be made in almost any flavor...just change the extracts. My favorite flavors are rum and mint, but caramel is yummy too! Use the basic recipe and switch up extracts for variety.  Store these in an airtight container, or glass ball jar in the freezer and always have them on hand.

Chocolate "Peanut Butter" Ice Cream

A good basic chocolate ice cream recipe. This is rich, creamy and very satisfying. Instead of cashews, try pili nuts!!! (Or mix cashews and pili nuts).
Don't have young Thai coconuts? Try Coconut Cream Concentrate and water. Once you get a nice, thick creamy consistency in the blender - follow any of the options for making ice cream and you should have a delicious dessert to share with your loved ones!

(Gluten Free) Coconut Zebra -Striped Cookies

What started out as an attempt to modify a macaroon, turned into a delicious, crunchy coconut almond cookie. These cookies are very light, a little dry, and as crunchy as you want - Just dehydrate them longer. Want them chewy? Pop cookies  in freezer and don't dehydrate at all, or dehydrate for a couple of hours to set the chocolate stripes. Change up the extracts and you can prepare these in almost any variety. Fabulous from bowl to plate or dehydrator to dish. You decide!

(Dairy Free) Chocolate Covered Strawberry-Cheesecake Pudding Parfait

Okay, so I'm on a pudding parfait roll...Can you blame me? Pudding has always been one of my favorite treats, and raw vegan pudding is just exquisite! I get bored with the same thing over and over, so I keep changing up ingredients. For all of you that really want to make pudding, but don't have access to young Thai coconuts,  I used Tropical Traditions Coconut Cream instead. Yes, it turned out as tasty as it looks and definitely thickens as it chills and the coconut cream starts to set. Your family and friends will LOVE you for making this for them!

Classic Raw Vegan Chocolate-Vanilla Pudding Parfait

I've published several pudding/mousse variations, but here is the BASIC recipe which can be modified in so many ways. Don't like cashews? Add more coconut meat and chia seeds. Dislike chocolate? Add frozen fruit and/or extracts. Instead of Vanilla Pudding, add caramel, butterscotch or rum extracts. Instead of Chocolate Pudding, add hazelnut, almond, or coffee extracts.

Chocolate - Butterscotch Mousse Parfait

One of my favorite dessert recipes ever! I make so many different variations of this and rarely ever measure. The recipe below is just a base, but you can make this in almost any flavor using extracts and things like mesquite, lucuma, macca, fruit, etc. This is one of my favorite combinations!. I hope you enjoy it too!

Want a lighter body? Use less cashews and more coconut meat. Easy to switch up and change consistency. Sometimes, I hardly use any cashews at all.

Butterscotch - Rum Ripple Ice Cream

This is by far one of my all time favorite ice cream recipes. A friend told me that if I continued to make this for him, he'd give up Ben & Jerry's forever! The photo pictured is for visual only. Everyone ate it so fast, I never got a photo! This recipe is definitely enhanced using Medicine Flower extracts. If you don't have them, feel free to use an alternative, but these are the BEST. This ice cream is amazing! A little goes a long way, but you might want to double this. I served 6 small portions, but it was plenty!

Raw Gingerbread Cookies

What is this magical holiday season without Gingerbread Cookies? Feel free to use this recipe and make Gingerbread Men too! I'm packing these up in gift bags for family and friends, and also taking them for our road trip to visit the GrandPrincess. If you don't have a dehydrator, just freeze them, and eat as is!

Brownie Cake with Mocha Almond Fudge Cream

Okay you gluten-free, dairy-free, health nuts...I purchased these cute molds and wanted to try something super decadent. Drooling yet?  If you don't have access to this type of mold, no worries...use the cake recipe as a deep dish crust and fill with the Mocha Almond Cream.  You may have some extra brownie cake batter - SHUCKS! Eat it as is, freeze it in small molds for a fun frozen treat, or create little brownies with cake mixture, stuffed with cream and dehydrate for a several hours. Decadent AND nutritious. No guilt.

Not-So Black "Licorice Candy" Wheels

Black licorice has always been a love of mine, and while sucking on licorice root is pleasant, nothing has come close to the CHEWY texture of black licorice candy. Here's my first attempt at raw "licorice" wheels. They're still in the dehydrator,and should get a bit darker and firmer than pictures. Chewy, delicious, and enough "licorice" flavor from the star-anise lingers that lingers nicely on your tongue.

Terrific Truffles - Energizing Treats

The holidays are drawing near and I wanted to surprise my family with nourishing treats. We'll also be on the road and now have some energizing snacks for us to nosh on. For sweet toothers, you may add more sweetener than what I suggested below. These are more spicy than sweet.

Who says we have to eat junk on the holiday? Spend time with your loved ones and warm up with these deep chocolate/spicy delights.

Phenomenal "Chunky" Fudge

"CREAMY," "Naked," "Chocolate," "Sensual"...are the words that come to mind as this amazing creation melts in my mouth. (Food Porn at it's finest?) I swear this is better than any "real" fudge I've ever eaten, and no sugar hangover! I kept it very simple, but it could easily be doctored up with flavor extracts such as mint or hazelnut, almond, lavender, etc.This took about 20 minutes to prepare and ten minutes to set...and then....Gone Gone Gone...

Creamy Coffee Bliss Ice Cream

I'm still having fun with my adopted Champion Juicer. Frozen fruit ice cream is easy, but I wanted to use some of the amazing Medicine Flower extracts that I have, and see what creamy goodness I could come up with. You do have to plan for this in advance and wait for the mixture to freeze, but it's worth the wait. This was amazing!! I can't wait to try other flavors!!!!

"Peanut Butter" Fudge Ripple Ice Cream

This does taste as creamy and yummy as it looks! FYI - this bowl is only about 2.5 inches in diameter. These are delicious mini scoops, not full sized scoops. The flavor and texture are so rich you only need a small amount to feel satisfied. INDULGE without guilt!

Mother Earth gave us a very special blessing today. The weather was FABULOUS and we took full advantage of it. We were outside all day at an art show where my daughter was showing her beautiful painted furniture. It was a long day and when I arrived home,  I wanted a quick energizing snack. This is what I created.

Strawberry Custard Cream Pie

I made this awhile ago, and never posted it. Someone asked for it, so here ya go. This is a nice light summer treat, and the only nuts are in the crust, so you could make the "custard" without it, if you wanted to avoid nuts altogether.  I didn't measure everything, so the recipe below is approximate. Good thing about raw food, is you can taste it as you go along. So...taste it and adjust measurements as you see fit!

Watermelon Lemonade Popsicles

Okay - gonna make this one really easy! This is the same recipe that I posted yesterday for Watermelon Lemonade. A few of you wrote and told me that you made it and loved it. I had some extra and poured it into my ice pop molds...and here we have delicious, refreshing, wonderfully scrumptious Watermelon Lemonade Ice Pops!!! Enjoy!
