(Dairy Free) Chocolate Covered Strawberry-Cheesecake Pudding Parfait

Okay, so I'm on a pudding parfait roll...Can you blame me? Pudding has always been one of my favorite treats, and raw vegan pudding is just exquisite! I get bored with the same thing over and over, so I keep changing up ingredients. For all of you that really want to make pudding, but don't have access to young Thai coconuts,  I used Tropical Traditions Coconut Cream instead. Yes, it turned out as tasty as it looks and definitely thickens as it chills and the coconut cream starts to set. Your family and friends will LOVE you for making this for them!

Strawberry Custard Cream Pie

I made this awhile ago, and never posted it. Someone asked for it, so here ya go. This is a nice light summer treat, and the only nuts are in the crust, so you could make the "custard" without it, if you wanted to avoid nuts altogether.  I didn't measure everything, so the recipe below is approximate. Good thing about raw food, is you can taste it as you go along. So...taste it and adjust measurements as you see fit!

Vanilla Strawberry Cupcakes

This was my very first raw cupcake. Pretty tasty, especially if you are a strawberry fan. W LOVES them! I still want to do some tweaking on the cupcake part, and I'd make mini cupcakes next time. These things are pretty dense.They'd make a great breakfast!

Strawberry Custard (Dairy Free/Nut Free)

This mixture reminded more of a light, creamy custard or yogurt consistency which is very different from the Rich Chocolate Fudge Mousse that I posted recently. No nuts in this recipe!!! It's very refreshing, and makes an incredible summer dessert or snack.

I'm still experimenting with Irish moss and while it can be a bit tricky, the textures you can achieve are astounding, and definitely worth looking into.

Strawberry Simplicity

Simple, Sensational and oh so Sexxxy!You can't get more simple than this! My self-imposed challenge with the Medicine Flower Giveaway, has been to explore creative and fun ways to use the most amazing gourmet extracts I've ever tasted...and smelled! Have I mentioned the scent?  W often sees me walk into the kitchen, open up a bottle of this yummy elixir, and...


...usually followed by an "Ohhhh My God!"  Such DECADENT goodness packed into a tiny bottle.

Well, sometimes, the most obvious is the most overlooked. Today, my simple strawberry offering to you is this:

Green No-Strawberry Strawberry Smoothie

I do love biting into a sweet, ripe, juicy strawberry on occasion, but I'm not a huge fan of strawberry shakes or ice cream. (Also, the seeds sometimes bother my tummy). I have to admit that playing with my new Medicine Flower Strawberry Extract has opened my eyes to a whole realm of possibilities. So here is a strawberry smoothie, without any strawberries!

The strawberry essence of these extracts is incredibly rich and fresh, and the aroma is incredible...and no seeds to upset my tummy! I can make a smoothie, using ANY fruit, or hardly any fruit at all, add a few drops of these strawberry extracts and YUMMMMMMM. No one would believe there were no strawberries in this strawberry smoothie!!!

Have I told you how much I love these things???
