Creamy Carrot Guacamole Soup

Ohhhh, this is a keeper! It didn’t come out at all like I was expecting, but so much better. What started out as a creamy carrot soup, gone green, turned into a guacamole love bowl. Get out your corn chips!!! This is one hearty meal!!!!!

Spinach Stuffed Nut Meat Loaf

I previously prepared a nut loaf and while it was very tasty, I prefer this recipe. By adding chopped spinach I was pleasantly surprised at the results. Feel free to nix the spinach filling and just do a basic loaf topped with the "ketchup" as well, but it was much tastier and healthier with the spinach.Try it!

Primavera Frittata

This is so simple and quick to make and it serves up beautifully. Yummy enough to serve to your non-raw foodie friends. I used a large round cookie cutter as a mold, so you could make mini frittata as an appetizer that would look outstanding and totally impress your guests!

Creamy Wild Mushroom and Spinach Pasta

Inspired by this delicious quiche recipe, I concocted an incredibly tasty cream sauce, served over a combination of kelp and zucchini noodles.  I also used Eden's artichoke pasta (in photo), for W. I don't do pasta, but will allow myself a very small helping of these.

The recipe is a KEEPER!

Not only does mesquite powder taste great, it satisfies your hunger and helps to stabilize blood sugar, but it's a great source of calcium, magnesium, potassium, iron and zinc, and contains the amino acid lysine. Mesquite powder is also high in dietary fiber and protein! I use it in smoothies, drinks and other desserts. It partners really well with cacao powder.

The sun is shining and it's another beautiful day! My pears were ripe, so I added one to my smoothie and def like that flavor. W also brought home some golden beats and I threw a couple of those beautiful leaves into the mix. Arugula, Swiss Chard, kiwi, pear, apple, 1/2 avocado, frozen blueberries, flax seeds (ground), goji berries  and dates. Also see the Chocolate Mind Bender...

Raw Creamed Spinach

I currently have "swimmer's ear" and it is wickedly painful. I cannot chew, so eating solids is out right now. For dinner tonight, I needed something creamy and satisfying. I had a bunch of spinach around, so I made creamed spinach. It was really tasty. I warmed it every so slightly in a pan, stirring constantly, just to take the chill off.

Spinach Cream Soup

YUmmmm! the previous spinach soup just didn't really do it for me. I missed the richness of cream. This recipe is easier to make than the last, and W and I both really liked it a lot! Because of the creamy texture, I didn't mind that it wasn't hot at all. Thumbs up!

Spinach Soup...

I made a few changes and used the author's suggestion of slightly warming the soup. It was tasty but I can't say I LOVED it. There are a few other "cream" spinach soups I'd like to try too. Here is the recipe for non nut eaters. The next attempt will be a cream spinach soup.

Cream of Vegetable Soup

This is one of those "everything but the kitchen sink" recipes...creamy and satisfying! Cashew cream is amazing and works wonders on soups. This is not a raw recipe and was used as I transitioned away from dairy and discovered the wonders of nut milk and nut cream. I have several cream of "whatever" vegetable soup in my blog, so just check under the "soup" category.

Create your own amazing soup. Be creative. Use your own variety of veggies and seasonings, add cashew cream, and BLENNNNNDDDD. Yummmmmmmm - enjoy!
