Wild Blueberry Coconut Pudding

Wild blueberries are significantly more nutrient dense than their cultivated cousins and unlike other fruits, maintain their magnificence even frozen.  This pudding took minutes to make and is one of my favorite dishes. This was breakfast today.

Add some bananas and dried coconut for a decadent, delicious, and nutritious treat. As each coconut varies in volume and ratio, meat:water, you’ll have to play it by ear with regard to chia, cashews and additional water, if needed.

Sprouted Lentil "Rye" Crisps

I truly adore these light, crisp crackers with a nut or seed pate or humus. Growing up Jewish in "Joisey," I was raised on, and loved a really good Jewish Rye. The ground fennel seeds in this recipe work their magic, providing a tone so very reminiscent of this bread....and now...no gluten or processed junk to worry about.

Lentils and buckwheat are easy to sprout in a Mason jar, using sprouting lids. Click HERE for directions on sprouting buckwheat. Lentils take a bit longer, but don't need to be dehydrated.

Fabulous Living Oatmeal

This is the BEST oatmeal we've ever tasted. It's nothing like cooked, mushy oatmeal. The texture and flavor are fantastic. Delicious and nutritious!!!! A nice hearty breakfast when you are craving something more than a smoothie. Sticks to your ribs AND energizes! Great way to send your kids off to school!

Apple Walnut Muffins - Gluten-Free

Served warm from the dehydrator, these muffins are very reminiscent of the SAD (Standard American Diet - aka BAKED) version. I didn't make them too sweet, and sunflower seeds can have a little bite, so sweeten according to your taste. I love the "Autumn Spiciness." Drizzle with raw honey, cashew cream, or your favorite fruit "syrup"...oh, and some raw ice cream - HEAVEN!

Magnificent Mango Hummus - (Raw Vegan)

After preparing a Coconut Mango Cream Pie that was to LIVE for, I still had some leftover Champagne Mangos (Ataulfo) from a case that needed to be used. I also froze a bunch to use for "ice cream" at another time. So today, I whipped up this Magnificent Mango Hummus and served it in a few romaine lettuce leaves. I could see this going really nicely on a salad, but would also make a great dip, if thinned out a bit. This is definitely a QUICK and EASY recipe!

Chocolate-Raspberry-Vanilla Pudding Parfait (Raw Vegan)

It is 85 degrees F and I'm not feeling very hungry for dinner, so I created this fabulous triple pudding parfait. By using either fruit (fresh or frozen), or dried fruit powder, you can prepare this in almost any flavor. I chose Chocolate, Raspberry and Vanilla.

This is not an exact science. If you don't have young Thai coconuts, you can use a combo of dried coconut, cashews and chia. Adjust water as needed too. Don't be afraid to experiment until you get the consistency you desire. My parfait is chillin' in the fridge and I can't wait to dig in...

Not-So Black "Licorice Candy" Wheels

Black licorice has always been a love of mine, and while sucking on licorice root is pleasant, nothing has come close to the CHEWY texture of black licorice candy. Here's my first attempt at raw "licorice" wheels. They're still in the dehydrator,and should get a bit darker and firmer than pictures. Chewy, delicious, and enough "licorice" flavor from the star-anise lingers that lingers nicely on your tongue.

Hazelnut-Pili Nut Chocolate Crunch

Looking for a refreshing replacement for chocolate that still gives your mouth that happy, rich, creamy, satisfying feel? Pricey, yes, and I only had a 6-ounce bag to play with, but pili nuts are the balm!!! Oh the things I would create if I had a few pounds of these!! When mixed in a food processor or blender, the consistency is a silky smooth, ultra-creamy gift from heaven!While they are expensive...every now and then, it's fun to treat yourself to a bit of sheer healthy decadence.  Read more about the health benefits of pili nuts here.

Hot Pepper Cheese Dip and/or Pepper Poppers (Vegan)

ZIPPPPPPPPPY! Lots of "Fooled You" peppers from the garden begging to be made into something yummy. This pepper is pretty cool. as it tastes a lot like jalapeno without the heat. The recipe is a lovely Popper Cheese, and since the peppers were missing heat, the cheese is not. What an awesome DIP!!! The Pepper Poppers are still in the dehydrator, but W and I both snatched one..and they were so flavorful, giving our taste buds a lovely jolt of spicy goodness . So either way...a zippy, cheesy dip for your veggies, raw crackers and chips, or a filling for your Pepper Poppers...

Glazed Cinnamon & Spice Cake/Donuts

Hold onto your hats ladies and gents, and hear me out on this one. No curling up your noses...promise? Sprouted chickpeas work wonders in living brownies, cookies and cakes. The texture is fantastic! Yes, their flavor can be a bit overwhelming,  so you have to get creative and find ways to bring out the yummy flavor tones. Something spicy like cinnamon and nutmeg work quite well. I recently posted my RT's Deep Chocolate Decadencealso made with sprouts....do I hear an OINK?

Creamy Green Garlic 'N Dill Dressing

Tonight I made this HUGE salad for dinner and was in the mood for something creamy with a dill flavor. I came up with this very yummy garlic and dill dressing with a hint of horseradish. You can add more dill and more horseradish per your preference. Makes a great veggie dip or massage into a wilted kale salad. Add more cashews if you want to thicken it. Here's the basic recipe...

Papaya-Banana Swirl Ice Cream

OHhhhhhhhhh HEAVENLY GOODNESS! A friend of mine blessed me with her old Champion Juicer. Just prior to giving it to me, it was accidentally dropped (and survived), but needed a few replacement parts that had cracked. I managed to find a really good deal on some of the parts, including a BLANK PLATE (for under $3.00) at Amazon.

I had NO idea what I was missing!!!! Such creamy deliciousness

BBQ Kale Chips (RAWBQ)

The BBQ Zucchini Chips were such a hit the other day, I used the same recipe on dino kale (Lacinato). AWESOME, although, very different texture from the zucchini chips. I personally prefer curly kale...either way, this recipe is a winner. It's VERY zippy, so tone down the red chili powder and cayenne, if you don't like spicy!

Spicy BBQ Zucchini Chips (RAWBQ)

A friend gave us some overgrown zucchinis. Large circumference zucchinis do not spiralize well. So, how about making some "potato" chips? These are so crazy reminiscent of BBQ potato chips, I can't believe it! Warning - they are very spicy, so cut down on the hot red chili powder and cayenne if you want a tamer version.  You may want to double this recipe...they are amazing!

White Chocolate Cheesecake - Happy Anniversary W!!!

I made this over the holidays for my family and my daughter thought it was such a hit, she declared, "Mom, Mom...you need to sell these..seriously, they are amazing...and no one has to know they are healthy." Although, I wished she were more enthusiastic in appreciating the healthy factor as a positive thing, I still took what she said as a huge compliment. I just re-created the recipe for my 6th anniversary with W, and it came out super light and fluffy.

Walnut Pate

This pate is reminiscent of tuna or chicken salad, but so much better. Loaded with omega 3's, walnuts are considered the ultimate "brain food." Walnuts can also triple meletonin levels in the body, so if you have trouble sleeping, you might want to give walnuts a try in the evening. Try making pesto with walnuts and herbs instead of pine nuts.

Award Winning - Chewy Chocolate Coco-Nutty Super Puffs

I was traveling to visit my kids and granddaughter, and grabbed a bunch of ingredients, blended them up, and dehydrated them so I'd have a healthy snack to munch on while away. My daughter ended up eating most of them after her rigorous work-outs. I ended up leaving them behind for her to finish up. We stored them in the freezer, and found they tasted even better that way! As always, many of the ingredients can be eliminated or replaced. Let your creative juices flow...Update: So excited to be awarded a gift certificate by Nutiva for this recipe.
