Wild Blueberry Coconut Pudding

Wild blueberries are significantly more nutrient dense than their cultivated cousins and unlike other fruits, maintain their magnificence even frozen.  This pudding took minutes to make and is one of my favorite dishes. This was breakfast today.

Add some bananas and dried coconut for a decadent, delicious, and nutritious treat. As each coconut varies in volume and ratio, meat:water, you’ll have to play it by ear with regard to chia, cashews and additional water, if needed.

Rawfully Tempting's Sensational Red Cabbage Slaw

Quick, easy, refreshing....delicious! I recently harvested an amazing batch of sunflower seed shoots and wanted to feature them in a salad that was a snap to prepare. Obviously, if you don't have sunflower shoots, you may use other sprouts...but I highly suggest giving them a shot, they are my favorite sprouts of all!!!

And That's a Wrap!!! - A Coconut Wrap(per)!!!

If you have a dehydrator and have access to young Thai coconuts...these are a breeze. If not, there are certainly other ways to make wraps, but I was focusing on quick and easy with the tools I have. Delicious and super light! Continue to dehydrate, and instead of a flexible wrap, you have a light, crunchy snack! Switch up seasoning and create something sweet, savory and/or spicy! The variations are limitless! I chose a Chipotle Wrap below...

Fabulous Living Oatmeal

This is the BEST oatmeal we've ever tasted. It's nothing like cooked, mushy oatmeal. The texture and flavor are fantastic. Delicious and nutritious!!!! A nice hearty breakfast when you are craving something more than a smoothie. Sticks to your ribs AND energizes! Great way to send your kids off to school!

Living Tree Smoothie Spectacular

One of my favorite online stores, Living Tree Community sent me a lovely sample pack of their vibrant living butters. Yesteday, although it's really easy, I wasn't in the mood to cut open a coconut, and opted to create a spectacular blend of these delicious ingredients without having to make a nut milk or coconut milk base. I have to say, everything from this store vibrates with LOVE...and this smoothie, was indeed SPECTACULAR. Turmeric Butter, Mesquite, Maca and extracts are always optional, but take some time to read about them. The added flavors are great, but they are also super nutritious!  I suggest you try some of these products...but if you don't have them available, improvise with almond butter, or any combination of nut butters that seem to go well together. This is one of my quick and easy smoothies..sort of a "cheater" smoothie..making nut milk using butters and water..no straining, no mess.

 There is practically nothing on this Earth as yummy as fresh Almond Milk...(okay, well maybe Coconut Milk). Once you realize how easy this is to prepare, you can begin creating variations, adding even more nutrients and flavor to this remarkable beverage!  Today I prepared Sesame Almond Milk and it is delicious! Pecan-Carob Maca Milkshake

Oh Yum! Thank you Living Tree Community for another fantastic product. Of course this is lick-off-the-spoon-fantastic, but I was in a hurry and wanted to toss together a quick, satisfying beverage. I didn't quite measure everything, so amounts are approximate, but this is so reminiscent of a frothy milkshake. Feel free to adjust as needed.

Dairy-Free (Mocha) Almond Yogurt


I was inspired to revisit almond yogurt when a client asked me to prepare some for her. I had forgotten how easy it was. Once the plain yogurt was made, I moved on to Mocha Almond Yogurt. What a delight! I even added some leftover Water Kefir I had in refrigerator, along with probiotic powder. I didn't quite measure things exactly, but will list to the best of my ability. Enjoy!

His mommy is an artist and wanted a color for his middle name, so bronze it is. Being Grammy to a precious newborn requires some quick prep delights. I hope you enjoy this recipe.

(Dairy Free) Chocolate Covered Strawberry-Cheesecake Pudding Parfait

Okay, so I'm on a pudding parfait roll...Can you blame me? Pudding has always been one of my favorite treats, and raw vegan pudding is just exquisite! I get bored with the same thing over and over, so I keep changing up ingredients. For all of you that really want to make pudding, but don't have access to young Thai coconuts,  I used Tropical Traditions Coconut Cream instead. Yes, it turned out as tasty as it looks and definitely thickens as it chills and the coconut cream starts to set. Your family and friends will LOVE you for making this for them!

Classic Raw Vegan Chocolate-Vanilla Pudding Parfait

I've published several pudding/mousse variations, but here is the BASIC recipe which can be modified in so many ways. Don't like cashews? Add more coconut meat and chia seeds. Dislike chocolate? Add frozen fruit and/or extracts. Instead of Vanilla Pudding, add caramel, butterscotch or rum extracts. Instead of Chocolate Pudding, add hazelnut, almond, or coffee extracts.

Pecan-Sunflower Seed Milk - Milk Does a Body Good

If you have not explored making your own nut milk, please consider doing so. It is very simple, does not take a lot of time, and is extremely delicious and satisfying!

Tired of almond milk? Try mixing other nuts and seeds. Today I used pecans, sunflower seeds, dates and vanilla extract. It was fabulous!

Coconut Curry and Lemongrass Soup

This quick and easy soup was a delight to create, and loved by all. Serve lightly warmed, room temperature, or chilled. Select from several garnishes, or choose your own. If you don't like ginger, eliminate it. If you want it spicier, add more red chilli powder. Because it is so rich, this soup makes a tasty side, served with salad.

Persimmon Pudding/ No-Pumpkin Pie

NOT a fan of pumpkin pie! Sorry, it goes back to my childhood when one of my Aunties, prepared a pumpkin pie. I had never tasted one, but was willing to give it a shot, and said I would "try" a taste. My cousin said she would "have" a taste. Apparently, my Aunt saw a huge difference between "trying" and "having", and when my nose curled, and I almost gagged, I was excused from eating my slice. My cousin, however, was told she couldn't leave the table until she finished hers. I will never forget the look on her face. For years no one in my family could stand to eat pumpkin pie. So....this is about as close as I'm ever going to get, and honestly, this was DELISH!

FenneBeetEry Smoothie (Fennel, Beets, Celery)

One of the oddest concoctions I've ever created. Nothing was measured, but will do my best to approximate. To be honest, I didn't predict this was going to be successful. However, adding these ingredients together, created a very nutmeg-ish flavor reminiscent of eggnog. The color is stunning! Go ahead and add some greens. We were traveling, just got home, and had not picked any up yet.  Any suggestions for a good name?

Pasta Tzatziki
