Sweet Potato Latkes (Pancakes)

 I love creating healthy, raw vegan versions of recipes that are connected to "comfort foods" from my childhood. Potato Latkes were a favorite that mom used to cook up. They always make me feel happy, and  remind me of a connection to family when we all lived nearby and could celebrate together. With my mom just passing recently, I'm revisiting some of her Traditional Recipes, and challenging myself to make a raw version. SUCCESS! While they look a little dry, they are moist, chewy and full of flavor. Once you put the raw applesauce on top, they soften and rehydrate the outside of the pancake.  The onion flavor and texture tingle my taste buds and really remind me of Grammy's Latkes!

Fabulous Living Oatmeal

This is the BEST oatmeal we've ever tasted. It's nothing like cooked, mushy oatmeal. The texture and flavor are fantastic. Delicious and nutritious!!!! A nice hearty breakfast when you are craving something more than a smoothie. Sticks to your ribs AND energizes! Great way to send your kids off to school!

Rawfully Tempting Raw Chocolate Fruit and Nut Bark

This was gone gone gone before I could get a good photo. Tempering raw chocolate is possible, but challenging. I'm not a greatchocolatier as I don't have the patience or the equipment, however, I try to attempt manually tempering whenever possible. For a quick..."I don't care about fussing" treat...simple - DO NOT temper. Throw this tastiness together, and store in the refrigerator or freezer. WARNING: It will melt in your EAT it quickly, or break into smaller, bite-sized pieces. This will cure any junk food craving for sweets!  There are several optional ingredients. I hope you use this blog for educational purposes, so even if you don't choose to use all of the suggested ingredients, you may at least become aware they exist.

Apple Walnut Muffins - Gluten-Free

Served warm from the dehydrator, these muffins are very reminiscent of the SAD (Standard American Diet - aka BAKED) version. I didn't make them too sweet, and sunflower seeds can have a little bite, so sweeten according to your taste. I love the "Autumn Spiciness." Drizzle with raw honey, cashew cream, or your favorite fruit "syrup"...oh, and some raw ice cream - HEAVEN!

Pasta Tzatziki

Brownie Cake with Mocha Almond Fudge Cream

Okay you gluten-free, dairy-free, health nuts...I purchased these cute molds and wanted to try something super decadent. Drooling yet?  If you don't have access to this type of mold, no worries...use the cake recipe as a deep dish crust and fill with the Mocha Almond Cream.  You may have some extra brownie cake batter - SHUCKS! Eat it as is, freeze it in small molds for a fun frozen treat, or create little brownies with cake mixture, stuffed with cream and dehydrate for a several hours. Decadent AND nutritious. No guilt.

I love chia pudding...and I love why not put them all together?

This recipe is quick and easy, rich and satisfying. I hope you enjoy this. As always, feel free to substitute and add other ingredients to suite your preference. This is just a starting point! Ingredients don't have to be exact...adjust thickness with chia, coconut meat, and/or cashews...

Martini anyone? OHHHH..this one you can even share with your kiddles....sometimes, it's all about presentation. Try a fancy glass or straw. Don't hold back on a garnish...treat yourself as you would a guest. Relax and enjoy this special beverage/smoothie.

Magnificent Mango Hummus - (Raw Vegan)

After preparing a Coconut Mango Cream Pie that was to LIVE for, I still had some leftover Champagne Mangos (Ataulfo) from a case that needed to be used. I also froze a bunch to use for "ice cream" at another time. So today, I whipped up this Magnificent Mango Hummus and served it in a few romaine lettuce leaves. I could see this going really nicely on a salad, but would also make a great dip, if thinned out a bit. This is definitely a QUICK and EASY recipe!

Chocolate-Raspberry-Vanilla Pudding Parfait (Raw Vegan)

It is 85 degrees F and I'm not feeling very hungry for dinner, so I created this fabulous triple pudding parfait. By using either fruit (fresh or frozen), or dried fruit powder, you can prepare this in almost any flavor. I chose Chocolate, Raspberry and Vanilla.

This is not an exact science. If you don't have young Thai coconuts, you can use a combo of dried coconut, cashews and chia. Adjust water as needed too. Don't be afraid to experiment until you get the consistency you desire. My parfait is chillin' in the fridge and I can't wait to dig in...

Coconut Champagne Mango Crackers - (Raw Vegan)

Oh, the joy of Raw Food preparation. Remember my "Award" winning recipe for Pasta & Champagne Mango Cream Sauce? (If not, check it out). I was preparing it for a demo and had some leftover "sauce." What to do? Add a few more ingredients...and make crackers! This delicious treat is a cross between cracker and roll-up. I encourage you to add other ingredients and experiment with different textures. I've included the items I added to the sauce to make these crackers...but there are so many variations you can choose.

Almond Milk Heaven

I have published How to Make Almond Milk before, but this morning, I was reminded of it's stunning simplicity. For those of you who have never tried it, I URGE you to give it a shot! I'm in Heaven as I sit here sipping one of my all time favorite beverages. All you need is a blender and either a nut milk bag, paint bag(you can get a Lowe's), or a piece of cheese cloth, doubled.

Pasta With Smoky Chipotle Sauce

This is a quick and easy dish to prepare, and can be served either cold or gently warmed.  Feel free to add your favorite garnish. Once the sauce is made, it only  takes a few minutes to put this lovely dish together. Serve with your favorite raw corn chips.

Nuts! - All About Almonds...

I'm happy to say the hunt for quality organic,  unpasteurized almonds has finally ended. While the USDA prohibits the sale of unpasteurized almonds, if you are diligent, there are options, and you can still find good quality almonds. You may have to order them online, (if you don't have a roadside almond grower nearby), but it's worth it. I want almonds that are truly alive, or why bother? I'm checking out almonds from different suppliers/farms/handlers, and I'll keep you posted on my findings.

Hazelnut-Pili Nut Chocolate Crunch

Looking for a refreshing replacement for chocolate that still gives your mouth that happy, rich, creamy, satisfying feel? Pricey, yes, and I only had a 6-ounce bag to play with, but pili nuts are the balm!!! Oh the things I would create if I had a few pounds of these!! When mixed in a food processor or blender, the consistency is a silky smooth, ultra-creamy gift from heaven!While they are expensive...every now and then, it's fun to treat yourself to a bit of sheer healthy decadence.  Read more about the health benefits of pili nuts here.

Hot Pepper Cheese Dip and/or Pepper Poppers (Vegan)

ZIPPPPPPPPPY! Lots of "Fooled You" peppers from the garden begging to be made into something yummy. This pepper is pretty cool. as it tastes a lot like jalapeno without the heat. The recipe is a lovely Popper Cheese, and since the peppers were missing heat, the cheese is not. What an awesome DIP!!! The Pepper Poppers are still in the dehydrator, but W and I both snatched one..and they were so flavorful, giving our taste buds a lovely jolt of spicy goodness . So either way...a zippy, cheesy dip for your veggies, raw crackers and chips, or a filling for your Pepper Poppers...
