Sweet Potato Latkes (Pancakes)


 I love creating healthy, raw vegan versions of recipes that are connected to "comfort foods" from my childhood. Potato Latkes were a favorite that mom used to cook up. They always make me feel happy, and  remind me of a connection to family when we all lived nearby and could celebrate together. With my mom just passing recently, I'm revisiting some of her Traditional Recipes, and challenging myself to make a raw version. SUCCESS! While they look a little dry, they are moist, chewy and full of flavor. Once you put the raw applesauce on top, they soften and rehydrate the outside of the pancake.  The onion flavor and texture tingle my taste buds and really remind me of Grammy's Latkes!

Pasta With Smoky Chipotle Sauce

This is a quick and easy dish to prepare, and can be served either cold or gently warmed.  Feel free to add your favorite garnish. Once the sauce is made, it only  takes a few minutes to put this lovely dish together. Serve with your favorite raw corn chips.

Sunflower Seeds and Shoots...and Putting it All Together...

When you start exploring the world of Living Food, it can seem a little intimidating. It's been over 2 years now, and as I sit here with a happy tummy and a glow of accomplishment, I have to tell you some of my thoughts... and also share my meal with you. It took me about 30 minutes to put this gorgeous meal together. Yes, some things were prepared in advance, and when you learn how and when to do this, it makes the joy of preparing a successful raw living meal, immeasurable. All of the steps that I've learned up until now are coming together, like musical notes for each instrument in a symphony. The gratification I'm feeling is immense. How can I put these feelings into words and accurately convey to you, just how fulfilling and worthwhile this can be?  The commitment to invest a bit of  your time and energy, and learn about living food is required. I like to play... and I love to experiment, in fact, to me they are one and the same. I never imagined I'd be where I am now...chopping greens out of my garden, photographing them, and then writing about it. Have a few moments to spare? Spicy BBQ RAWsh Kebobs

Raw vegan veggie kebabs are the bomb! When I discover a good thing, I try to find multiple ways to use it. For instance, last week I posted the Spicy BBQ Zucchini Chips and because of this outrageous BBQ Sauce, the chips were jaw-dropping outrageous! Between the two of us and friends, they don't hang around long! I thought it might be interesting to create a kebab, using the same BBQ sauce on veggies. Oh yeah!  I hope you enjoy this as much as we did!

Creamy Red Pepper and Garlic Salad Dressing

Now that I'm eating huge salads every day with lots of roots and wilted kale, I'm playing around with creamier dressings to compliment the heavier salads. I had lots of leftover zucchini from the BBQ chips I made, so I tossed it in the blender and came up with this very light dressing. Leave out the avocado, and you've got a fat-free dressing.

Raw Vegan Borscht

My friends on Facebook who often read this blog. laughed at me tonight,when I asked what I should do with raw beets. Seriously, I've always loved cooked and pickled beets, but have never been a fan of raw, plain beets. I got lots of great suggestions, and quickly blended up this very tasty treat. I won't say raw beets are my favorite food - but this was definitely tasty. I really have to make some beetkraut sometime soon, but for tonight - here's my Raw Vegan Borscht.

Walnut Pate

This pate is reminiscent of tuna or chicken salad, but so much better. Loaded with omega 3's, walnuts are considered the ultimate "brain food." Walnuts can also triple meletonin levels in the body, so if you have trouble sleeping, you might want to give walnuts a try in the evening. Try making pesto with walnuts and herbs instead of pine nuts.

e-Book Sneak Preview


Living Pizza - I'm really looking forward to getting my first publication completed and available for download, however, my hard drive crashed and it's been a month of technical nightmares trying to get my laptop up and running again. After 5 days, my Carbonite restore is still only downloading empty folders and we are at about 20 percent now..(sigh). They've restarted it multiple times, only delaying the agony. I'm crossing my fingers and hoping that in the next week..I'll be able to reorganize my folders, access my book files...and compete this project. In the meantime, here is a sneak preview of one of the goodies you will find in this upcoming book...Enjoy!

Spinach Stuffed Nut Meat Loaf

I previously prepared a nut loaf and while it was very tasty, I prefer this recipe. By adding chopped spinach I was pleasantly surprised at the results. Feel free to nix the spinach filling and just do a basic loaf topped with the "ketchup" as well, but it was much tastier and healthier with the spinach.Try it!

Leftovers

Last night I made a spectacular Mexican Style Cauliflower Rissoto.  Rather than waste any leftovers, I took the remaining "Sauce" and Rissoto and threw this meal together in about ten minutes!!!

Mexican Style "Rissoto"


Soooo good, I practically licked the plate clean. Yesterday, I posted Chef Russel Jame's Cauliflower Rice in a Creamy Cheese Sauce recipe video, along with my own version of the recipe. Tonight, I was on a roll and inspired to create a totally different flavor. You can do this. See how easy it is? Just changing up some of the herbs and spices, gives a whole new style to this dish. Thank you Russell James!

Cauliflower "Rice" and Creamy "Cheese" Sauce

I've been posting some real "Quick and Easy" recipes the past few days. W is still away, and when I prepare food for myself, I want it to be seriously simple. Chef Russell James is at it again and posted a few awesome videos. One of them contained this cauliflower recipe, and like me, he is encouraging you to PLAY in the kitchen and let yourself be creative. Take a basic recipe and run with it. This is what I did after watching his videos.

Creamy Veggie Sauce on Zucchini Pasta

This delicious recipe is so quick and easy and I was amazed how satisfying it felt. It's very cold here today and there was a concern that this would not feel so good. Boy was I wrong! I enjoyed this meal without even warming it up. Adding a bit of Spicy Kim Chi helped add a bit of warmth to the dish, and using delicious ready-made Kim Chi made this recipe super simple!. This is a keeper.

One of the very first foods I gave up when I started eating raw living food, was bread. I learned how the gluten acts like "GLUE" in the gut, sticking to it, fermenting, clogging, and wreaking havoc on my body. Here's a lovely way to enjoy a good wrap without the negative side effects.

Asian Arame/Seaweed Salad

Arame is a species of seaweed or kelp that has a mild, semi-sweet flavor. Arame comes in a dried form and due to it's mild flavor, can be reconstituted and added to dishes without impacting the flavor. Just one serving of arame provides over 100 percent of the daily value for iodine and 50 percent of the daily requirements for calcium. Arame has been reported to improve overall immune function, and condition of hair skin and nails. Due to it's high content of lignans it has been the focus of several anti-cancer studies.

UPDATE - I now replace arame with ATLANTIC COAST SEA VEGGIES, DULSE or KELP FLAKES.

Raw Tortilla Soup (Sans tortillas)

I came across this recipe, had all of the ingredients, except tortillas, and decided to make my first soup since I got the VitaBaby!  Instead of corn chips, we used corn kernels. Certainly not traditional dinner for Yom Kippur, but it worked for us. We added a yummy salad and threw in some of the leftover corn and cilantro, and dinner was divine!

RAWsh Kebobs

My sweetheart, W, was craving veggie kebobs the other night. I had seen a photo that someone posted recently with raw kebobs, so I figured I'd give it a shot. They came out very tasty. You can experiment with different spices and sauces. I'd let the veggies marinate overnight next time, but a very nice light dish. The pineapple really enhanced the flavors.

Quick MozzaRAWla Cheese

Here is a quick and easy "cheese" that can be used for pizza, zucchini pasta, rawvioli, etc. Feel free to embellish with your favorite herbs and spices. I prefer to keep the cheese simple and add spices to my sauces.
