Coconut Mango Pudding

Quick and easy, delightful summer treat. Blend, chill, and serve!!!

There are so many variations that are possible. Add wild blueberries, bananas, pineapple, etc. almost anything goes. Add water or almond milk, only as needed. Feel free to switch out maple syrup for a few dates.

I used fresh young Thai coconut meat, but you can use dried unsweetened coconut too. Soak for one hour to rehydrate, drain  and follow recipe. It may not be as creamy and I suggest using almond milk instead of water. I have a video on you tube demonstrating how to open these coconuts. It’s fun and pretty simple. These make great ice pops too!!!

Wild Blueberry Cream Pudding Parfait

Deeeeeelish!!! It’s creamy and light for an enjoyable summer snack.  I can eat this for lunch.

Feel free to use almonds instead of cashews, it won’t be quite as creamy, but still delicious. A great dairy free snack your non vegan friends would never guess did not have milk. Other fruit variations work well too.

Chocolate-Raspberry-Vanilla Pudding Parfait (Raw Vegan)

It is 85 degrees F and I'm not feeling very hungry for dinner, so I created this fabulous triple pudding parfait. By using either fruit (fresh or frozen), or dried fruit powder, you can prepare this in almost any flavor. I chose Chocolate, Raspberry and Vanilla.

This is not an exact science. If you don't have young Thai coconuts, you can use a combo of dried coconut, cashews and chia. Adjust water as needed too. Don't be afraid to experiment until you get the consistency you desire. My parfait is chillin' in the fridge and I can't wait to dig in...

Cranberry Nut Muffins

These scrumptious muffins are awesome this time of  year. They can be frozen and popped in the dehydrator to warm as needed. The mixture can also be made into a lovely cranberry nut bread and served with a drizzle of raw honey.

Raw Dried Cinnamon Apples

Drying cinnamon apples fills your home with the most super fabulous aroma and for those without a dehydrator, I'm told you can do this in your oven on the lowest setting.


When I made these, I used a combination of Golden Delicious and Fuji apples. It's interesting to see the different the textures and tastes, depending upon the apple. I like the way the two colors looked together when they were finished.

So Berry Simple - Ice Pops

This is so simple, I almost didn't post it, but sometimes, we forget the most obvious. I saw these star - shaped ice pop molds in Whole Foods and was like a little kid. Ideas were flashing through my head of all the fun flavors that I could create for the summer. Okay, so I'm thinking,  FUDGESICLE!!!

African Horned Melon (Kiwano)

W brought this home from the store today, and I had no idea what it was, or what to expect. I had to do a little research and find out HOW to eat it, before I was brave enough to pick up the very sharp horned fruit and slice into it.

Raw - Flax, Fruit, Pineapples & Patience - Update

Update on my first D experiments: The  

Mediterranean Almond Bread was the winner! The pineapples came out fabulous, but I think I cut them too thin, and they took a really long time. What was left, I devoured in about 3 minutes!!! Makes note: dehydrate a LOT of pineapples!!!  The Sun Dried Tomato Flax Crackers are good if you like that really grainy texture and also like the taste of sun dried tomatoes.
