Choco Fudge Wafers

I made these lil treats for my grandsons...but I really love them.  I’ve also made them like Oreo cookies with a cream filling....but here’s the simple version.

Adjust ingredients to make more or less sweet. Taste batter as you go along, and adjust.  Like them chewy? Dehydrate around 12 hours. Want them crunchy? Dehydrate at least 24 hours, possibly longer, depending on humidity in your home and other factors. These are delicious.

Sprouted Lentil "Rye" Crisps

I truly adore these light, crisp crackers with a nut or seed pate or humus. Growing up Jewish in "Joisey," I was raised on, and loved a really good Jewish Rye. The ground fennel seeds in this recipe work their magic, providing a tone so very reminiscent of this bread....and gluten or processed junk to worry about.

Lentils and buckwheat are easy to sprout in a Mason jar, using sprouting lids. Click HERE for directions on sprouting buckwheat. Lentils take a bit longer, but don't need to be dehydrated.

Sweet Potato Latkes (Pancakes)

 I love creating healthy, raw vegan versions of recipes that are connected to "comfort foods" from my childhood. Potato Latkes were a favorite that mom used to cook up. They always make me feel happy, and  remind me of a connection to family when we all lived nearby and could celebrate together. With my mom just passing recently, I'm revisiting some of her Traditional Recipes, and challenging myself to make a raw version. SUCCESS! While they look a little dry, they are moist, chewy and full of flavor. Once you put the raw applesauce on top, they soften and rehydrate the outside of the pancake.  The onion flavor and texture tingle my taste buds and really remind me of Grammy's Latkes!

Apple Walnut Muffins - Gluten-Free

Served warm from the dehydrator, these muffins are very reminiscent of the SAD (Standard American Diet - aka BAKED) version. I didn't make them too sweet, and sunflower seeds can have a little bite, so sweeten according to your taste. I love the "Autumn Spiciness." Drizzle with raw honey, cashew cream, or your favorite fruit "syrup"...oh, and some raw ice cream - HEAVEN!

Banana Nut Flatbread - January 2014 Newsletter

I've made quite a few flatbreads over the years, but to date, this is my all time favorite. It's so tasty, that you don't need to put anything on it. However, add some nut butter or raw cheese and sliced apples, for a really special treat! These are great for any road trip, and I plan on taking them with me to the Living Raw Expo in LA! Raw Gingerbread Cookies

What is this magical holiday season without Gingerbread Cookies? Feel free to use this recipe and make Gingerbread Men too! I'm packing these up in gift bags for family and friends, and also taking them for our road trip to visit the GrandPrincess. If you don't have a dehydrator, just freeze them, and eat as is!

She Put de Lime in de Coconut...(Smoothie)

She drank 'em bot' up...Yes I did! Simple, easy and delicious.

You can prepare many variations of this...eliminate, substitute, or add to your heart's content...Just enjoy enjoy enjoy! I used water kefir and young Thai coconut (water and meat), but you can use almond milk or any nut milk you enjoy.

Cocoa Crunchy Granola

A great breakfast treat for your kids when trying to wean them off of junk cereal. It's also a great snack to pack in their lunch boxes. For the "big" kids, this is just a delicious and nutritious treat for any time of day. Traveling? Take this treat on the road. This is  a very versatile recipe. I encourage you to pick and choose the ingredients you like, and have...and re create your own version. Pssst! Add a little ground flax or chia and water to the mix, and you can form into little energy bars or cookies.

Horseradish 'n Dill Crackers/Bread

As part of my recent exploration into "my roots," I prepared fresh Horseradish. It was deeply earthy and delicious. From that recipe, I made a Horseradish Hummus/Dipwhich was lighter in texture, but also fabulous. I needed some crunchy crackers... So what else? Horseradish  'n Dill Crackers, of course! The horseradish flavor turned out rather mild  while the dill seems to permeate the crackers. I love dill, so it works for me, and I can spread either horseradish or the hummus on them. If you're not a fan of dill, replace it with another herb. Walnut crackers are great! Walnuts give a richness, extra crunch, and a splendid nutty tone. This recipe may also be prepared as a bread.

Purple Taco Shell

The idea was to make a SOFT tortilla shell. Silly me, forgetting that corn is crunchy, not flexible. I'd have to do some major tweaking to get a soft shell. We ended up with wonderful purple corn taco shells. We stuffed them with "refried beans" made with almonds which were amazing. Honesty, I don't think anyone would know they were not refried beans!  They certainly would never guess they were made with almonds! We also added Guacamole, Salsa and Mexican Veggies

I saw these on The Chew as a cooked recipe a few weeks ago and decided to make a raw version. They came out fabulous and could be served as either a breakfast or dessert (topped with raw ice cream). YUMMMMERS!

"Rye" Wraps

Last week I made an Onion Wrap and it was delicious. This time, I wanted to experiment with the recipe. Getting just the right thickness is a little tricky,  but they really are pretty easy to throw together.

These are very similar to the Onion Wrap, however, I added 1 cup of veggie pulp from juicing (carrots, celery, kale, dandelion, apple, cucumber, etc). I also cut down on the onion a bit, and added a couple of teaspoons of caraway seeds to the batter, which gives this recipe a lovely "rye" bread taste that W and I both adore..

Onion Wrap

One of the very first foods I gave up when I started eating raw living food, was bread. I learned how the gluten acts like "GLUE" in the gut, sticking to it, fermenting, clogging, and wreaking havoc on my body. Here's a lovely way to enjoy a good wrap without the negative side effects.

Cranberry Nut Muffins

These scrumptious muffins are awesome this time of  year. They can be frozen and popped in the dehydrator to warm as needed. The mixture can also be made into a lovely cranberry nut bread and served with a drizzle of raw honey.

Just Like Grammy Leas' - Raw Noodle Kugel (Pudding)

As the Jewish Holidays draw near and I come close to the anniversary of my mom's passing, I'm reminded of my favorite traditional dishes that she'd make for our family. In addition to her Cranberry Jello MoldSweet Potato Casserole,  and Latkes, Mom's Noodle Kugel was my absolute favorite! Loaded with eggs, egg noodles, butter, sugar, and topped with corn flakes, I opted to create a raw version of this family dish, using healthy ingredients.

Pistachio Crisps/Crackers

Still on a pistachio kick! The other day we made that delicious Pistachio Green Dream Smoothie, right? Well, I had some gorgeous pistachio pulp left over and decided to use this and create a new cracker recipe. I ended up with these fantastic crisps. Eat as is, or smear with some luxurious Pistachio Butter.  If you are missing crunchy will love these!

The air is cool and crisp, back into long sleeves, and snuggling under the blanket at night while watching TV, or listening to music. Apples are so scrumptious right now, I have them for lunch every day. After working on my previous Apple Walnut Muffins, I was reminded of the days we used to take our kids to the farm, pick apples and feast on Apple Cider Donuts.
