Mint Carob Smoothie

I received a complimentary jar of Living Tree CommunitAlmond Tahini Carob Butter. All I can say is - LTC - you've created another WINNER! Eat it right off the spoon, spread on dehydrated crackers, or add  it to smoothies, puddings, "cheesecakes," etc.

Deep Cleanse Smoothie

For some reason, I've only juiced parsley, and never thought to use it in a smoothie, until I was at a friend's house the other night, and she prepared one for us. It was great and super refreshing. Parsley is one of the most popular herbs and so often used for seasoning or garnish, that people overlook the amazing healing properties of this vibrant ingredient.

FenneBeetEry Smoothie (Fennel, Beets, Celery)

One of the oddest concoctions I've ever created. Nothing was measured, but will do my best to approximate. To be honest, I didn't predict this was going to be successful. However, adding these ingredients together, created a very nutmeg-ish flavor reminiscent of eggnog. The color is stunning! Go ahead and add some greens. We were traveling, just got home, and had not picked any up yet.  Any suggestions for a good name?

Beet and Horseradish Dip/Hummus

For those of you following my blog, you know i'm on a root kick...and one of the roots my doc wants me to have a tiny bit of each day..horseradish root. I made some kick-ass horseradish, but it's really potent and I needed to come up with a milder alternative. The goal was to create a hummus, however, this could be used as a veggie dip, hummus, condiment in wraps, etc. Once you prepare the horseradish, you can make this as hot or mild as you like. Irish Moss Paste is optional, but I explain in another post how to make it and freeze it so you have it on hand when needed. Here's a great article on the benefits and cautions in using horseradish.

Creamy Red Pepper and Garlic Salad Dressing

Now that I'm eating huge salads every day with lots of roots and wilted kale, I'm playing around with creamier dressings to compliment the heavier salads. I had lots of leftover zucchini from the BBQ chips I made, so I tossed it in the blender and came up with this very light dressing. Leave out the avocado, and you've got a fat-free dressing.

Salad - Getting Back to My ROOTS!!!

While I LOVE preparing gourmet treats for friends and family, and creating new and exciting recipes for this blog, in my every day life, I stick pretty close to my ROOTS...and this month, I can say that literally. My holistic physician, has me slowing down on smoothies and juices, and focusing more on C H E W I N G. What perfect timing! My garden is growing and what I am not growing, other friends are, and sharing. Dr. E wants me eating LOTS of R O O T S., so here they are...

Raw Vegan Borscht

My friends on Facebook who often read this blog. laughed at me tonight,when I asked what I should do with raw beets. Seriously, I've always loved cooked and pickled beets, but have never been a fan of raw, plain beets. I got lots of great suggestions, and quickly blended up this very tasty treat. I won't say raw beets are my favorite food - but this was definitely tasty. I really have to make some beetkraut sometime soon, but for tonight - here's my Raw Vegan Borscht.
